OUR LEMON PIE RECIPE

1 Graham Cracker pie crust

5 eggs

1 can sweetened condensed milk

3 TBSP lemon juice

3 TBSP. sugar

a pinch of cream of tartar (Optional)

 

Separate egg whites from yolks.  Mix together 3 egg yolks (beaten with fork), lemon juice and condensed milk.  Set aside. Make the meringue.

For meringue - Beat together 5 egg whites on high speed of mixer until soft peaks are formed. Add a pinch of cream of tartar and add sugar 1 TBSP at a time.

Spoon lemon mixture into pie crust. Put meringue on top. Start at the edges and go around the pie, then fill in the center. Bake at 350 degrees for approximately 10 minutes or until top is light golden brown.
